The meat is light, tender and lean, and looks somewhat similar to chicken.

Rabbit meat is the most climate-friendly meat one can eat at the moment, if one chooses to eat meat, according to the industry organisation Sveriges kaninproducenters förening. Swedes are eating more meat than ever before. On average, we consumed more than 86 kilos, which is a new record level. Consumption of chicken and beef is increasing above all. But beef places a burden on the environment through emissions of the greenhouse gas methane and runs counter to the desire to reduce our climate impact.

We need to find alternative sources of protein that do not strain resources as much. We should eat more vegetables, less meat and more fish. For example, we are trying to develop fish farms based on a circular approach, says Carl-Gustaf Thulin, director of the Centre for Wildlife and Fish Research at SLU, to Sydsvenskan. Carl-Gustaf Thulin’s proposal is that Sweden should invest in rabbit farming.

Most recipes for pork, veal and chicken also work well with rabbit after adjusting the cooking time. Rabbit meat is “dense” and therefore requires longer heating of at least one hour.
