Our Bulgarian yogurt is thick and creamy, with a flavor that has exactly the perfect balance between mild and tangy. Bulgarian yogurt is also somewhat thicker than regular yogurt, but less thick than Greek yogurt, and is slightly softer and less sour than regular yogurt.

Bulgarian yogurt is a thermophilic yogurt variety, which means a heat-loving type of yogurt. So you need a warm place, such as a yogurt maker, dehydrator, sous vide device, or steam oven to make it. See below for details.

Njordstorp’s starter culture consists of pure freeze-dried cultures without any strange ingredients. You can produce batch after batch using the yogurt you made the first time. Depending on your hygiene, it may become contaminated, and if you notice that the flavor or acidity changes, you can start over with the culture you have left in the pouch.

Making Bulgarian Yogurt the Traditional Way

Tools you need:

Yogurt maker, dehydrator, steam oven, or sous vide device that maintains a temperature of approximately 43 °C

Cheesecloth

Activating your starter:

Take 1 liter of milk and slowly heat it to the boiling point so that all bacteria are killed. Unpasteurized milk will probably contain residual bacteria, so you must use twice as much starter to ensure that the correct culture dominates. You also do this because heating the milk denatures its proteins and adjusts its fat molecules in a way that produces a more flavorful yogurt.

Let the milk cool to 43 °C; this can be done in the same jar.

Add the starter culture to the milk and stir well, but do not whisk, as this creates bubbles and may increase the risk of contamination.

Cover your containers loosely (do not seal them airtight). Wrap the containers well in blankets to minimize heat loss.

Place the container with the milk in your yogurt maker or whatever you plan to use.

Ferment the milk at 43 °C for approximately 6 to 8 hours.

The yogurt has set when it separates cleanly from the sides of the jar when you tilt it.

You can use 2 tablespoons of this yogurt to make a new batch.

Store in the refrigerator for up to 14 days.

This yogurt can be made with dairy milk, vegan milk, and essentially any milk that you would like to turn into yogurt, except lactose-free milk.

Storage instructions for the starter culture:
Store in the refrigerator or freezer. The starter culture is highly hydrophilic; if moisture enters the package, it will impair the quality. Shelf life is approximately 1–2 years in the freezer.

Contents: starter cultures and milk powder. The product is freeze-dried and can be stored for a long time; the package can be resealed after opening and therefore used for several batches.

[253,338,339
290,301,309,303,311,316,327,346
post-29729","product","type-product","status-publish","has-post-thumbnail","product_cat-starter-cultures","product_cat-yoghurt","product_cat-yoghurt-making","product_tag-authentic","product_tag-bulgarian-yogurt","product_tag-probiotic","product_tag-probiotics","product_tag-starters","product_tag-thermophilic","product_tag-vintage","product_tag-yoghurt","first","instock","taxable","shipping-taxable","purchasable","product-type-variable
["GET
