Buttermilk contains less than 0.5% fat and has a tangy taste. Buttermilk has emulsifying properties due to phospholipids and is therefore used in cooking. Its consistency is somewhat thick but thinner than filmjölk. Make it at home for an easy, flavourful drink.

All you need is one packet of our culture and milk. However, the starter can be used with several different types of milk, including vegan milk. It is excellent for yoghurt drinks, pancakes and frozen yoghurt too. It can be used to make sour cream, crème fraîche, cultured butter, etc.

You can control the thickness and flavour of your buttermilk by controlling the incubation time, making it anything from creamy to thick and from mild and sweet to tangy. From simply a fermented milk alternative to a thick, creamy and smooth yoghurt-like buttermilk, making it ideal for drinking, eating, baking, cooking, etc.

Buttermilk starter culture is a mesophilic starter that can be made at room temperature—no yoghurt machine is needed.

Njordstorp’s starter cultures are purely freeze-dried cultures without strange ingredients. You can make batch after batch with the buttermilk you made the first time. Depending on your hygiene, it may become contaminated, and if you notice that the taste or acidity changes, you can start over with the culture remaining in the packet. This product is freeze-dried and can be stored for a long time; the package can be resealed after opening and therefore used for several batches as well.

Our buttermilk starter works with all types of dairy milk—cow, sheep, goat, skimmed, whole, raw or unpasteurised. It can also be used with any dairy-free and vegan milk.

Storage instructions for starter culture: Store in the refrigerator or freezer. Starter culture is highly hygroscopic; if moisture enters the package, it will impair the quality. Shelf life: at least 2 years in the freezer / 1–2 years in the refrigerator / 10–12 months at room temperature.

Making buttermilk

Activate your starter culture

Let one cup (200 ml) of milk warm up from the refrigerator in a warm place to (24°C is optimal)

Add 3 measuring spoons of the culture from the package to the milk and stir until dissolved (seal the package immediately and store it in the freezer)

Cover the jar with a cloth to keep the cream clean from dust and airborne particles. Or screw on the lid, but do not tighten it fully.

Let the jar stand for about 24 hours and then check whether it has thickened. The milk has set if it separates slightly cleanly from the sides of the jar when you tilt it. The buttermilk will be runny, so the separation may look messy, but you will clearly notice a change in consistency.

If it has not set within 24 hours, let it stand for an additional 2–4 hours until it sets. This may depend on the ambient temperature and other conditions.

You now have an active culture that you can use as a starter culture in the next step.

Making the buttermilk:

Add your activated culture (the jar) to 1 litre of milk. Do this in a container so that you mix all the culture evenly with all the milk.

Stir gently until the active starter dissolves (you can now distribute this if desired)

Cover the jars and leave them at room temperature for 12–48 hours until set.

Move it to the refrigerator and store it there for at least 2 hours before drinking the buttermilk; this helps it thicken and improves its flavour.

You can make endless batches of buttermilk by simply reusing your previously made buttermilk to start a new batch, or by freezing portions that you can use later.

Store in the refrigerator for up to 5–8 days.

Ingredients: milk powder, freeze-dried starter cultures

[253,338,339
290,309,303,311,327,346
post-29819","product","type-product","status-publish","has-post-thumbnail","product_cat-starter-cultures","product_cat-yoghurt","product_cat-yoghurt-making","product_tag-authentic","product_tag-probiotic","product_tag-probiotics","product_tag-starters","product_tag-vintage","product_tag-yoghurt","first","instock","taxable","shipping-taxable","purchasable","product-type-variable","has-default-attributes
["GET
